In a process for the preparation of a protein concentrate for human or animal consumption, animal tissue such as whole fish is comminuted and the resultant suspension is subjected to an evaporation-extraction step wherein the suspension is contacted in counter current relation with vapours of a volatile solvent to remove a major part of the water from the suspension, the water-enriched solvent from this step being subjected to rectificationdistillation, the resulting water-freed solvent being recycled to the evaporation-extraction step. In the extraction step part of the fat and odour is also removed from the suspension. The residual fat and odour content may be further reduced by an additional exttraction step using fresh solvent. Suitable solvents are acetone, ethanol or isopropanol. The process may be carried out in the apparatus shown in the Figure wherein animal tissue is comminuted in the grinder 2 and fed to mixer 4 wherein the liquid content of the comminuted tissue may be increased by the addition of for instance, volatile solvent. The suspension is then passed to the contacting apparatus 11, wherein it is contacted with solvent vapours entering the apparatus through conduit 14. The treated suspension leaving the bottom of apparatus 11 is passed to a separator 19, and the tissue fraction may then be passed to apparatus 32 for further extraction. The water enriched solvent from the top of apparatus 11 and the fat containing solvent from separator 19 are passed to distillation column 17 for purification and recycling. Part of the recycled solvent may be passed to the apparatus 32. Fat enriched solvent from the separator may be passed to the mixer 4. A mixture of fat and water is drained from the bottom of column 17 and separated in the decanting device 35. The energy for the rectifying distillation is provided by a circulation evaporator 38 wherein part of the liquid from column 17 is evaporated by steam passing through the evaporator via conduits 41 and 42.
