A process for the biochemical isolation of l-menthol comprises selectively hydrolysing an organic carboxylic acid ester of dl-menthol or a mixture of organic carboxylic acid esters of dlmenthol isomers containing dl-menthol, wherein the organic carboxylic acid is of the formula R.COOH, where R is a hydrogen atom or an alkyl C 1-21 or alkenyl C 1-21 radical, the hydrolysis being performed by a carboxylic ester hydrolase which has been produced by a micro-organism selected from the genera Candida, Saccharomyces, Hansenula, Rhodotorula, Torulopcis, Schizosaceharomyces Pichia, Sporobolomyces, Debaromyces, Nadsonia, Trichosponon, Brettanomyces or Cryptococcus. Separation of the l-menthol from the reaction mixture takes place by fractional distillation or absorption chromatography on, for example, alumina. |
