Yeast with a high content of dry matter is obtained by separating yeast cells from fermentation liquor to the extent that the mass of yeast cells retained on the rotating drum 1 contains 23% or less extra-cellular water and a total maximum of 73 % moisture (extra-cellular plus intra-cellular fluid), washing the yeast by spraying with clean water applied through the common supply line 3 and a rotating spraying cone 8, and periodically braking the drum whereby the yeast is discharged into a conveyer worm 13. One or a number of perforated plates 14 are provided in the conveyer in order to achieve good mixing between the yeast and filter aid (starch) employed. Osmotically active material such as salt, may be added to the yeast wort before or during the separating treatment.
