Volatile aromatic constituents of tea and coffee are stabilized by separating an aqueous solution of the constituents from aqueous tea or coffee extracts, adding a stabilizing agent selected from water soluble carbohydrates and gelatins, and freeze-drying to obtain a water-soluble stable aromatised powder which releases the aroma upon addition of water. Prior to freeze-drying the solution may be concentrated. Suitable stabilizing agents include poly-, mono-, and di-saccharides, malto-dextrin, gum tragacanth, locust bean gum, pectins, hexitols, and gelatins. The products may be blended with instant tea and coffee, or used as flavouring for other beverages and desserts.
