[Also in Division C2] Additives for shortening compositions comprise half-esters of succinic acid and a monoacylated polyhydric alcohol derived from a straight chain C 14-24 saturated acid and a straight chain C 2-6 polyhydric alcohol, which half esters are prepared by reacting succinic anhydride and the mono acylate at temperatures below 115‹ C. and above the m.pt. of the mono-acylate and in the absence of a solvent for the anhydride to maintain a heterogeneous reaction mixture for substantially the whole reaction period. Example 1 describes the preparation by a liquid shortening based on winterized cottonseed oil and containing, as emulsifier, a mixture of the succinic half ester of mono-stearin and monostearin. The shortening also contains citric acid and an antioxidant.
