A popcorn-like flavour or aroma is imparted to foodstuffs or tobacco by the incorporation therewith of a compound selected from 2-acetylpyrazine, 2-acetyl-6-methyl pyrazine, and 2-acetyl-5-methyl pyrazine, preferably in an amount of 0.00003- 0.3 per cent by weight. A flavour concentrate according to the invention comprises 2-acetylpyrazine, benzilidine acetone, cinnamic aldehyde, helistropin, valeric acid, cinnamyl butyrate, ethylbutyrate, vanillin, lactic and butyric acids, and diacetyl. The flavouring agent may be supplied by mixing with or spraying or coating on to the product, or may be supplied coated onto the wrapping therefor.
