Starch in aqueous suspension is modified, below the gelatinization temperature, by treatment with 0À1-1À5% by wt. of hydrochloric acid, and 0À01-0À1% by wt. potassium permanganate, such that ozone is liberated, which decomposes into atomic oxygen which effects modification of the starch. The product is useful in food preparations.
