abstract A process for converting starch and other polysaccharides into dextrose and maltose containing products comprises the steps of subjecting a dextrose and maltose convertible polysaccharide medium to be treated first to enzymatic liquefaction and then to enzymatic saccharification, the liquefaction step being carried out by pressing the polysaccharide medium and a first portion of a liquefaction enzyme added thereto through a first tubular heat exchanger without any injection of steam, thereby to heat the medium to liquefaction temperature, and then through a pipe converter while maintaining substantially the same temperature and further into and through a second heat exchanger in which the medium is heated to a temperature of at least 110 DEG C. at a pressure such that no steam generation takes place, thereafter cooling the medium to liquefaction temperature and adding a second portion of the liquefaction enzyme thereto to complete the liquefaction of the medium.
