abstract A dry composition for producing puddings, custard, or baby food comprises powdered sugar and a cold-water dispersible starch product which has been produced by intimately mixing an aqueous suspension of starch or starch containing flour or a non-gelatinised conversion product thereof with a finely divided mono-and/or di-glyceride, and optionally also triglycerides, of a C8-C22 saturated fatty acid, subjecting the resulting mixture to a heating process with simultaneous removal of water, and grinding the resulting gelatinised reaction product together with powdered sugar, the powdered sugar being present in an amount of above 100% to 200% by weight of the sugar-free mixture. Alkali metal pyrophosphates may also be present.
