abstract A composition for the preservation of foodstuffs, for the sterilization of air in confined spaces and for cosmetic and pharmaceutical purposes comprising an essential oil having bacteriostatic and/or bactericidal properties or a bacteriostatically and/or bactericidally active compound extracted from such an oil, acetic or citric acid and ethanol or ispropyl alcohol. The composition may comprise oil of cloves, cinnamon oil, peppermint oil, oil of thyme, oil of rosemary, mustard oil, thymol, cinnamic aldehyde, polyoxyethylene oleate or stearate, polyoxyethylene sorbitan mono-palmitate, mono- or tri-oleate, or mono- or tri-stearate, and mucilages of animal, vegetable or synthetic origin (e.g. tragacanth or agar-agar). The composition may be in the form of an aqueous concentrate. The composition may be applied to the food by steeping or spraying. Sheep's guts, pigs' intestines, fish, shellfish, sausages, cheese and pastry goods may be treated. The composition may be sprayed or vapourized in room to sterilize it.
