abstract A gel-forming polysaccharide derivative comprises a finely-divided carboxymethyl ether of starch, amylose or amylopectin cross-linked by esterified carboxymethyl ether linkages. The carboxymethyl ether, in a water-miscible organic liquid medium, is acidified, maintained under acidic conditions until acid carboxymethyl groups in the polysaccharide material form esterified carboxymethyl ether crosslinkages, and then remaining carboxymethyl groups are neutralized. Specified organic media are methanol, ethanol, isopropanol and acetone. The cross-linking reaction may be effected by acidification with mineral acids, and maintaining the reaction mixture at e.g. pH 0-2 for a few minutes to several hours, at room temperature. The acid product may be separated and re-suspended in the above organic liquid medium before neutralization by addition of alkali, or alkali may be added directly to the acid reaction mixture. The neutralized produce may be separated by filtration, washed with the organic liquid medium and dried. In one embodiment, starch amylose or amylopectin is carboxymethylated in known manner, and the treatment with acid and alkali is carried out on the product without isolating it from the carboxymethylating medium. The product of the invention, consisting of starch, amylose or amylopectin molecules cross-linked by -O-CH2-COO-groups form stable gels in water.
