abstract A method for the transfer of air or other oxygen-containing gas to a mash or other wort for the production of micro-organisms, particularly bakers' yeast, by aerobic fermentation involves the step of varying the absorption coefficient of the mash with respect to oxygen as a function of the alcohol content of the mash, while the supply of oxygen-containing gas to the mash remains substantially unchanged. The absorption coefficient may be varied either by controlling the speed of rotation of an agitator in the mash (say, within \sB6% from a normal speed value) in relation to the alcohol content measured in the mash, or by the addition of a surface-active agent, such as a foam-breaking agent, exemplified by an adduct between ethylene oxide and a nonlphenol and Turkey-red oil. A spectro-photometric method for determining the alcohol content of the mash, is disclosed.
