The invention relates to a process for producing a sorbitol syrup with a total reducing sugar content of less than or equal to 0.2% and a mannitol content of less than 1% to a solids content of 70%. in weight. The method of manufacture is characterized in that it comprises the steps of (a) hydrolyzing a sucrose solution to a solution of invert sugars, (b) separating the invert sugar solution from the pool by simulated moving bed chromatography. on the one hand, a dextrose syrup of at least 99.3%, preferably 99.4%, still more preferably at least 99.5%, and even more preferably 99.7%, of dextrose richness and, secondly, a fructose syrup containing at least 90%, preferably 92%, of fructose richness; and (c) hydrogenation of said dextrose syrup into a sorbitol syrup with a total reducing sugar content of less than or equal to 0.2% and of a mannitol content of less than 1% to a solids content of 70% by weight. |
