The invention relates to a pulverulent emulsifying composition comprising for 100% of their mass: from 5% by weight to 70% by mass, more particularly from 10% by weight to 50% by weight of at least one compound of formula (I): in which the radical R represents a saturated linear aliphatic radical containing from 12 to 22 carbon atoms, G represents the remainder of a reducing sugar chosen from the group consisting of glucose, xylose and arabinose, and x represents a higher decimal number; or equal to 1 and less than or equal to 10, from 95% by weight to 30% by weight, more particularly from 90% by mass to 50% by weight of one or more alcohols of formula (II): in which the radical R 'represents a linear saturated aliphatic radical containing from 12 to 22 carbon atoms, identical to or different from the radical R, as defined for formula (I), in which at least 90% by volume of particles are of diameter less than or equal to 250 mic rometers, and more particularly of diameter less than or equal to 150 micrometers; its use as well as new processes for preparing oil-in-water emulsions using the composition, and an oil-in-water emulsion. |
