The present invention relates to a method for increasing the amount of vitamin K2 obtained by culturing at least one strain of vitamin K2-producing lactic acid bacterium, wherein the cultivation of said strain is carried out under "resting cells" conditions, so that the the amount of vitamin K2 produced by the "resting cell" culture is greater, by a factor of at least about 1.2, than that obtained by cultivating said strain under standard fermentation conditions.Furthermore, the present invention aims at the biomass obtained from a culture of vitamin K2-producing lactic acid bacterium according to the above process.The invention also relates to a process for producing vitamin K2, processes for the preparation of food products, in particular fermented products, and or fresh dairy products, fortified with vitamin K2, as well as the food products thus obtained. |
