abstract The subject of the present invention is a bacterial composition, a process and an installation for using this composition, which are suitable for treating sludge highly loaded with animal fats. The bacterial composition combines bacterial strains comprising at least one of the strains of the genera Pseudomonas, Shewanella, Morganella, Myroides and Citrobacter. The sludge is conveyed to the tank (2) of a bioreactor (3), inside which the sludge is homogenized, oxygenated and maintained at a temperature of the order of 35 degree C. The residence time of the sludge inside the bioreactor (3) is of the order of 4 to 5 days per m <3>.
