The present invention relates to a process for the preparation of a powdery composition comprising a step of co-drying by atomization, without atomization support and without cryogenic food fluid, of an aqueous solution containing at least one initially hygroscopic product, having a temperature glass transition agent of 10 degree C at 110 degree C, and an anti-caking agent, especially a food anti-caking agent, or a mixture of anti-caking agents, especially chosen from colloidal silica, silicates, sodium carbonate, magnesium, calcium, talc and phosphate, the mixture of the aqueous solution and the anti-caking agent being obtained by concomitant spraying in the spray space of the solution of said anti-caking agent in powder form. |
