abstract The subject of the present invention is a method for characterizing the viability, vitality and stability of bacteria in outstanding stressful environments by combining a molecular measure of stress adaptation with a measurement of the condition. The invention also relates to the use of this method for the quality control of stress adaptation of bacterial preparations and the use of said method for the selection of such preparations. The malolactic and probiotic ferments are more particularly concerned.
