The present invention relates to the field of chemistry and more particularly to that of the extraction of natural substances. More specifically, it relates to a novel process for extracting isoflavones from already enriched plant preparations which makes it possible to obtain, without denaturation or chemical modification, concentrated extracts which are very rich in isoflavones in O-malonyl form in which the ratio is genistein / daidzein is virtually identical to that found in nature and in which the content of isoflavones little or not active, is very low. Use of these concentrated extracts in cosmetic formulations, in solid or fluid food preparations, or in pharmaceutical forms. |
