abstract |
The invention relates to an additive necessary for the preservation of poultry such as chickens and turkeys, or of rabbits, whole or cut, by canning. The additive comprises the following constituents: - an anti-oxygen acid compound, and - at least two sodium and / or potassium salts ensuring the maintenance and hardness of the bones and cartilage, and firmness of the flesh and skin after appertisation. The acidic compound can be citric acid. The salts are, for example, sodium citrate, sodium carbonate and sodium bicarbonate. |
