The invention relates to a composition in the form of a water-in-oil emulsion, having a viscosity measured with a RHEOMAT 180 viscometer at a shear rate of 200 s-1 and at 25 degrees C, ranging from 3 Pa. s (30 poises ) at 20 Pa.s (200 poise) and containing at least 78% of aqueous phase, of which at least 65% is water relative to the total weight of the composition, and, as sole emulsifying agent, a particular dimethicone copolyol. Preferably, the oily phase/emulsifying agent ratio being equal to or greater than 5. The composition according to the invention has the appearance of a cream and exhibits a particular rheological behavior: its shear rate changes over time, in particular during from the application on the skin where it "breaks" and suddenly releases the aqueous phase, bringing a great effect of freshness. This composition can be used in particular in the cosmetic and/or dermatological fields. |
