abstract The present invention relates to a process for manufacturing calcium tartrate allowing good industrial yield and providing a product of at least 50% purity, from an alkaline solution for descaling a wine tank such as: - one prepares ( 1) a basic alkaline solution containing 140 to 250 grams of potential tartaric acid per liter; - Acidifying (2) said alkaline solution obtained so that the pH after addition of calcium salt is at most at the end of the reaction equal to 8 in the reaction mixture thus formed; - Said mixture is homogenized (3) in which calcium salt has been added to precipitate said calcium tartrate, and the solid and wet part, containing the raw calcium tartrate, is separated (5) by any means, from the liquid part which constitutes a filtrate; - At least part of said filtrate is recycled (8) by adding it to the preparation of another basic alkaline solution containing 140 to 250 grams of potential tartaric acid per liter.
