The subject of the present invention is a process making it possible to reduce the irritant nature of compositions, in particular cleaning compositions, containing at least one anionic surfactant by adding at least one derivative containing a tertiary nitrogen and one or more fragments consisting of polyoxyethylene glycol and corresponding to the general formula (I): R ** 1-ZN (R ** 2) - [(CH2) x -N (W)] n -W (I) formula in which: R ** 1 represents a hydrocarbon radical, linear or branched, saturated or unsaturated, containing from 1 to 22 carbon atoms, Z represents a group containing at least one carbon atom of the sp3 type or of the sp2 type bonded to two hydrogen atoms and bonded to at least one heteroatom belonging to in groups V or VI of the periodic table, W represents the radical - (CH2 -CH (R ** 3) -O) m where m can vary from 1 to 200 and R ** 3 a hydrogen atom or a radical hydrocarbon containing from one to four carbon atoms, R ** 2 represents a hydrogen atom, a hydrocarbon radical containing from> one to four re carbon atoms, x is an integer between 2 and 6, preferably between 2 and 3, n is an integer between 0 and 12, more particularly between 0 and 3, and preferably between 0 and 1.
