abstract Process for selecting bacterial strains deficient in alpha-acetolactate decarboxylase with a view to promoting the production of diacetyl, characterized in that the said bacterium is placed in the presence of hydroxylamine, and in that the dimethylglyoxime possibly formed is detected, and Lactococcus lactis subsp. lactis biovar. diacetylactis thus obtained. The invention also relates to the use of such a process for the production of a flavoring ferment which can be used in the food industry.
