abstract |
Disclosed is a particulate salt composition for use in the manufacture of bromate-free yeast bakery products. The composition comprises a particulate core (1) of crystalline sodium chloride encapsulated in an inert thermoplastic shell (3) containing finely divided particles of ascorbic acid (5) dispersed at random. The particles may be able to flow freely in bulk, or agglomerated with a binder and optionally compressed. Also disclosed are a bread dough composition containing the salt composition and methods of making bromate-free yeast bread. Application to bakery. |
