abstract According to the invention, a plurality of groups of measurement values of a predetermined parameter (pH) representative of the degree of acidity of the medium are respectively acquired sequentially from a plurality of successive initial instants, until obtaining respectively at within each group a first predetermined number of consecutive measurement values having all satisfied a predetermined test criterion taking into account a reference variation in the degree of acidity, a reference value is established for each group from a first weighting processing relating to said first number of consecutive values of said group, and this reference value is associated with a reference instant, one defines, from the series of reference instants obtained, a series of particular instants at each of which a definitive measurement value is associated, determined from a second weighting process relating to a second predetermined number of values. consecutive reference rs associated respectively with reference instants close to the particular instant in question, the set of final measurement values and their associated particular instants being representative of the temporal evolution of the degree of acidity of the fermentation medium.
