abstract | The invention relates to a process for preparing an aromatic food substance of the "blue" type, characterized in that it comprises the steps consisting in: - preparing (1) a mixture consisting of at least one fat, a lipase in an amount sufficient to ensure the hydrolysis of at least a part of said fat into fatty acids and of a sufficient amount of Penicillium roqueforti spores to ferment said fatty acids; - to proceed (2) simultaneously with the hydrolysis of at least part of said fat and with the fermentation of said fatty acids by placing said mixture in a fermenter at a temperature between 25 ° C and 35 ° C for a period of 24 h to 72 h; - regulating (3) the pH of said mixture for at most the first four to six hours of the hydrolysis and fermentation step to approximately a value corresponding to the effective value of action of said lipase; - inactivating (4) said spores and said lipase at the end of said step (2) of hydrolysis and fermentation; - to obtain (5) said aromatic food substance at the outlet of said fermenter. |
