As a new industrial product, the present invention relates to an alpha-glycosyl-quercetin in which D-glucose residues in at least equimolar quantity are linked to quercetin by an alpha bond. This new product exhibits satisfactory water solubility, and also satisfactory tolerance and light stability. This product is prepared according to a process which comprises the steps of (a) subjecting a solution containing quercetin and an alpha-glucosyl-saccharide compound to the action of a saccharide transfer enzyme to form an alpha-glycosyl-quercetin, and (b) collecting the resulting alpha-glycosyl-quercetin. This product can be advantageously used, in combination with other materials, in the field of food products, cigarettes, tobacco, agents for receptive diseases, cosmetics and plastics, in particular as a rich agent. vitamin P having improved water solubility, as well as a highly harmless and naturally yellow coloring agent, antioxidant, deodorant, stabilizer, quality improver, antiseptic, prophylactic, therapeutic and agent UV absorbent. |
