abstract | The invention relates to a method for preparing fruit and vegetable nectar purees and cocktails with minimum loss of nutrients in quantity and quality. The process uses a bleaching system applied to fruit and vegetable rakes, in suitable mixtures. This allows: - to obtain, at the same time, on the one hand, on the one hand, the optimal conditions of enzymatic maceration, by pectinases and various natural enzymes of the raw materials themselves, on the other hand, a rational food balance of the nutrients in the product final, - to avoid the phenomena of microbial development without adding chemicals. Sterilization is carried out by mixing against the current of superheated water with the base mixture, in order to simultaneously obtain the elimination of microbes, the destruction of enzymes and the supply of water necessary for the constitution of the nectar or the mash. |
