STABILITY: NO DECREASE IN ENZYMATIC ACTIVITY OBSERVED UP TO 20 C UNDER THE EFFECT OF HEATING WITHOUT SUBSTRATE FOR 10 MINUTES AT A PH OF 10, BUT 90 OR MORE DECREASE IN ENZYMATIC ACTIVITY OBSERVED AT 50 C UNDER THE EFFECT OF HEATING FOR 10 MINUTES AND A PH OF 10. DEACTIVATION OCCURS AT 50 C UNDER THE EFFECT OF HEATING FOR 10 MINUTES AND A PH OF 8 AND A COMPLETE DEACTIVATION OCCURS AT 60 C UNDER THE EFFECT OF HEATING FOR 10 MINUTES AND A PH OF 8. PROTEASE IS STABLE UNDER ALKALINE CONDITIONS, ESPECIALLY WITH A PH INCLUDED BETWEEN 7 AND 11.5 AND IT IS STABLE WITH REGARD TO COOLING AND COOL DRYING; 3. ENZYME MOLECULE: PROTEASE IS A PROTEIN HAVING A MOLECULAR WEIGHT OF APPROXIMATELY 22,000 ACCORDING TO THE ESTIMATES OF THE COLLOIDAL FILTRATION PROCESS, AN ISOELECTRIC POINT OF 7.4 ACCORDING TO THE ELECTRO-FOCALIZATION PROCESS, A SUMMIT OF ' ABSORPTION FROM 275 TO 282 NM IN A UV ULTRA-VIOLETS ABSORPTION SPECTRUM, IR INFRARED ABSORPTION CHARACTERISTICS INDICATED IN FIGURE 5, AND A SERINE RESIDUE IN THE ACTIVE SITE. THIS ALKALINE PROTEASE IS PREPARED BY CULTIVATION OF NEW SPECIES OF NKS-21 BELONGING TO THE GENUS BACILLUS.
