abstract The invention relates to a method for reducing the thermal stability of a microbial rennet. The process involves bringing an aqueous solution of Mucor's microbial rennet into contact with a source of methionine oxidation under conditions such as to substantially reduce the thermal stability of said rennet. Application to the production of cheese by the coagulating action exerted on the milk by the microbial rennet thus obtained.
