IT IS CHARACTERIZED IN THAT THIS PROCESS CONSISTS OF THE FOLLOWING STEPS: A FIRST SOWING OF THE PRESSING JUICE AT THE PRESS OUTLET, BY MEANS OF A FIRST MIX OF HOMOFERMENTAL LACTIC BACTERIA MESOPHILIA, AT A DOSE OF WATER LESS 10BACTERIA PER ML; - WE KEEP THE JUICE SO SEEDED AT A TEMPERATURE BETWEEN 28 TO 35C, PREFERREDLY 30C, FOR 15 TO 20H, WITH SLOW AGITATION AND WITHOUT AERATION, SO AS TO OBTAIN A SUSPENSION CONSTITUTED OF AN INSOLUBLE FRACTION OF VEGETABLE PROTEINS AND PROTEINS MICROBIAL AND WITH A RESIDUAL LIQUID PHASE, THE SUSPENSION HAVING A PH BETWEEN 4.2 AND 4.5; - THIS INSOLUBLE FRACTION IS SEPARATED FROM THIS LIQUID PHASE; -AND THE RESIDUAL LIQUID AND THE INSOLUBLE FRACTION ARE TREATED SEPARATELY.
