IT IS CHARACTERIZED IN THAT THIS PROCESS CONSISTS OF THE FOLLOWING STEPS: A FIRST SOWING OF THE PRESSING JUICE AT THE PRESS OUTLET, BY MEANS OF A FIRST MIX OF HOMOFERMENTAL LACTIC BACTERIA MESOPHILIA, AT A DOSE OF WATER LESS 10BACTERIA PER ML; - WE KEEP THE JUICE SO SEEDED AT A TEMPERATURE BETWEEN 28 TO 35C, PREFERREDLY 30C, FOR 15 TO 20H, WITH SLOW AGITATION AND WITHOUT AERATION, SO AS TO OBTAIN A SUSPENSION CONSTITUTED OF AN INSOLUBLE FRACTION OF VEGETABLE PROTEINS AND PROTEINS MICROBIAL AND WITH A RESIDUAL LIQUID PHASE, THE SUSPENSION HAVING A PH BETWEEN 4.2 AND 4.5; - THIS INSOLUBLE FRACTION IS SEPARATED FROM THIS LIQUID PHASE; -AND THE RESIDUAL LIQUID AND THE INSOLUBLE FRACTION ARE TREATED SEPARATELY. IT RELATES IN PARTICULAR TO THE PROCESSING OF PRESSING JUICES OF VEGETABLE PRODUCTS, SUCH AS LOURS, VARIOUS LEGUMES AND PULPS, PRODUCTS FOR FORAGE USE, FOR THE PRODUCTION OF FOOD PROTEINS AND VARIOUS PROTEIN FOODS WITH NITROGEN.
