abstract | Growth of fungi on undried grain, esp. maize, is prevented by treating the grain with sodium diacetate in such a manner that the latter penetrates through the episperm and suppresses the growth of fungi in the endosperm. The amt. of sodium diacetate increases from 0.4-2.0 pref. 0.8-1.5 wt. % (w. r. t. the grain) with the increasing moisture content of the grain (from 20-35 wt.%) with the proviso that the amt. of sodium diacetate increases by 0.06 wt. % per 1% increase in the moisture content. The corn so treated can be used as cattle fodder, or processed to produce oil, starch, proteins, glucose etc. Corn can be stored without any artificial drying. Sodium diacetate is nontoxic, it even improves the taste of the product. |
