abstract Process comprises immersing the vegetable prods. for 1-3 mins in a water bath contg. a substance (1) which inhibits the Hill reaction i.e. oxygen capture and carbonic anhydride transfer by photosynthesis. The vegetable prods. are removed from the bath and while still wet are wrapped in a gas semi permeable material and hermetically sealed. Pref. (1) is Vitamin K, a vitamin belonging to the vitamin K gp. (K1 and K3) phthiocol, phenylurethane, dicoumarol, o-phenanthroline or dichlorophenol-dimethylurea and to it is added a NN'-dimethylformamide emulsion and a surfactant e.g. Sorbitan PQ 12. Process is partic. used for preserving bananas during transportation without refrigeration.
