abstract The subject of the invention is a method for preparing a food product that replaces eggs. The method comprises mixing water with the protein biomass powder to obtain a wet mixture, hydrating the wet mixture at room temperature, mixing the wet mixture at high speed, hydrating the mixed wet mixture at 6 C, mixing oil into the hydrated wet mixture at high speed, and emulsifying the mixed wet mixture, homogenizing the emulsified mixed wet mixture, heat the homogenized wet mixture in the range of 85 C to 90 C degrees, and add sodium chloride (NaCl) and citric acid to the heated wet mixture and mix to obtain a pH in the range of 3.5 to 4.0.
