OBTAINING AN ENZYMATIC PREPARATION OF CARBOHYDRASE ACTIVITY. IT IS OBTAINED FROM SELECTED CROPS OF ASPERGILLUS NIGER AND ASPERGILLUS ACUELATUS CBS 101.43 IN CONDITIONS OF PH FROM 3 TO 7, TEMPERATURE FROM 20 TO 40 CV AND CONTAINING THE NUTRIENT MEDIUM PECTIN AND ROASTED SOYBEAN FLOUR TREATED WITH A PROTEOLITIC ENZYME. THIS ENZYMATIC COMPLEX IS PURIFIED BY GEL CHROMATOGRAPHY TO REDUCE ITS PROTEASE ACTIVITY, AND IS CHARACTERIZED BY THE IMMONOELECTROPHORETIC SUPERPOSITION TECHNIQUE, AND THEN THE DESIRED PLANT MATERIAL IS TREATED WITH THIS CARBOHYDROLYTIC ENZYMATIC COMPLEX, WITH WHICH A LESS AFFINITY IS ACHIEVED FOR THE VEGETABLE PROTEIN OF SUGARS RESULTING FROM THE DECOMPOSITION OF CARBON HYDRATES.
