THE PIRUVATOXIADASA IS OBTAINED BY DISGREGATING A MICROORGANISM LIKE LACTOBACILLUS PLANTARUM DSM 2571 AND OTHERS, WHICH CONTAINS THE ENZYME, THEN THE DISGREGATED PHASE IS DILUTED IN WATER, SEPARATING, SEPARATING, AND SEPARATING: TPP AND DIVALENT METAL IONS; HAS AN OPTIMUM OF ACTIVITY AT PH OF 5.7; AN OPTIMAL STABILITY AT PH OF 5.6 TO 5.8; ONE KM FOR PYRUVATE AT 25JC OF 0.4 MMOL / L; ONE KM FOR PHOSPHATES AT 25JC OF 2.3 MMOL / L AND A MOLECULAR WEIGHT OF 146,000 DALTON.
