THE MATRAZ IS ALLOWED TO COOL OUT OF THE WATER BATH, THE SOLUTION IS CONCENTRATED AND ALLOWED TO REST. THE PRECIPITATE OBTAINED IS SEPARATED BY CENTRIFUGATION. IT IS USED TO GIVE FLAVOR AND AROMA TO FOODS.
