Alpha-amino acid preparation method characterized in that a chemical catalytic hydrolysis of an alpha-aminonitrile or one of its salts is carried out by reaction in aqueous solution of at least one carbonylated derivative on said alpha-aminonitrile or on one of its salts in the presence of hydroxide ions, the concentration of the aqueous medium in hydroxide ions being such that the equimolarity of the hydroxide with respect to the alpha-aminonitrile of parrida is reached appreciably because after formation of the alpha-amino acid salt the free alpha-amino acid corresponding to the starting alpha-aminonitrile is extracted. |
