abstract Procedure to deacidify must or wine, in which calcium carbonate is added to the drink, which reacts with the acid gives off carbon dioxide in gaseous form and forms calcium tartrate, from which crystals are formed that separate from the liquid and where furthermore, a further crystallization is aided by the addition of appropriate crystalline nuclei by the seat of tartrate crystals, characterized in that the crystalline nuclei are added to the drink as contact crystals in powder form and in an amount of at least 2 g per liter of beverage essentially at the same time with the calcium carbonate and which are kept by stirring in suspension for a contact time of at least approximately one hour, whereby the calcium tartrate that is generated by the reaction of the carbonate of Calcium with the acid, settles on the contact crystals and is then separated with them.
