abstract A process for the preparation of a sweetener composition based on a protein sweetener, at least one flavor modifier comprising a sweetener selected from L-glucose, D-fucose, xylitol, D-arabitol, lactulose, glucoheptose, D (+ )-galactose and its derivative D(+)-galactosamine or a salt thereof and, optionally, one or more of the following ingredients: saccharin, a sugar, a cyclamate, sodium chloride, a hydroxide and an agent bulking agent, whose procedure consists of combining the sweetener with the sweetness modifier at a temperature of up to 70ÂșC under dry conditions or in an aqueous solution or suspension at a pH ranging between 2 and 10, preferably 3 to 8.
