abstract Humulones &c. are extracted from hops with hexane, the humulones in the extract are concomitantly isomerized and reduced by heating in the presence of sodium borohydride solution containing sodium hydroxide, the reaction solution is acidified with an aqueous solution of sulphuric acid containing ammonium sulphate and the reduced isohumulones are extracted with hexane, and the reduced isohumulones are recovered as the water-soluble potassium salts by mixing the hexane extract with fresh water, heating to a temperature between 50 and 60ÂșC., adjusting the pH of the hot hexane-water mixture to between 7,5 and 9,0 with aqueous potassium hydroxide (to avoid extracting lupulones also) and separating the aqueous phase containing the potassium salts. The aqueous phase may then be concentrated to about 30-60% dissolved solids.
