abstract | An aqueous extract of tea or coffee is frozen and ground, the ground material is divided into two fractions, one of which is freeze dried, and the other fraction, which may comprise the fines, is compressed into a homogenous solid, which is comminuted and at least a part thereof freeze-dried. The compression may be effected batchwise, or continuously by extrusion to form for example a tube. During the extruding the surface of the solid is preferably fused to lubricate the passage through the apparatus, and the extruded material is then cooled. Extracts having a solids content of 20-30% may be frozen directly, whereas those having a higher content may be foamed prior to freezing. A suitable extrusion apparatus is that of Specification 1,156,759. |
