A powdered cooked rice improver containing low decomposition starch and dextrin in a ratio of 1: 9 to 9: 1 in a mass ratio, wherein the low decomposition starch has a molecular weight of 500,000 to 5,000,000 and dextrin has a DE value greater than one (1) and equal to or less than fifty (50), and in which a percentage of the powdered cooked rice improver remaining on a sieve with a 0.5 mm opening is less than 5%. |
