Method to determine the organoleptic quality of a composition of microalgae biomass rich in proteins that comprises at least 50% of proteins in dry weight of microalgae biomass, characterized in that the method comprises the determination of the content of 11 volatile organic compounds, being the 11 volatile organic compounds pentanal, hexanal, 1-octen-3-ol, 2-pentylfuran, octanal, 3,5-octadien-2-ol (or 3-octen-2-one), 3 , 5-octadien-2-one, nonanal, 2-nonenal, (E, E) -2,4-nonadienal and hexanoic acid, the microalgae biomass comprising more than 50% proteins in dry weight of biomass and being the microalgae of the genus Chlorella. |
