abstract A process for producing thermally inhibited starch comprising the steps of: (i) supplying alkaline starch having a pH, when measured in a 20% (w/v) aqueous dispersion, of between 9.1 and 11.2 ; (ii) adjustment of the water content of the starch between 2 and 22% by weight; (iii) heating the starch having the water content adjusted to between 130 and 190°C, while maintaining the water content of the starch above a level of 1% by weight for a sufficient time and at a sufficient pressure to initiate the inhibition of starch to form carboxylic acids before the pH falls below 9; (iv) continuation of heating of the starch between 130 and 190°C until viscosity stability is achieved; (v) cooling and, optionally, further processing of the starch.
