A process to prepare a base composition of a natural flavoring, which comprises the steps of: - cultivating a bacterial strain, in a culture medium, to produce and accumulate L-proline and / or a derivative thereof, in the culture medium, at a concentration corresponding to a percentage of at least 1.0%, by weight, of the culture medium; - optionally, separating the bacterial strain from the culture medium, after the culture step; - optionally concentrating the culture medium after the culture step; - adding a reducing sugar to the culture medium, after the culture stage; - thermally react the culture medium, after the addition of the reducing sugar, at a temperature of 75 ° C - 170 ° C for a period of at least 5 minutes; - optionally, concentrating the medium, after the thermal reaction stage, by means of an evaporation or spray drying process; where the reducing sugar is added to the medium, in an amount corresponding to a ratio value of 1: 5 to 10: 1 (based on weight / weight) of the sugar, with respect to the proline, and where, the bacterial strain, belongs to a genus selected from among Corynebacterium, Arthrobacter, Brevibacterium, Bacillus or Microbacterium. |
