abstract | A process of producing lactate or lactic acid from a plant extract by means of fermentation comprising a. providing a fermentation medium comprising at least 25% by weight of a plant extract containing fermentable carbohydrates; b. fermenting the fermentation medium by means of a lactic acid producing microorganism in the presence of a caustic magnesium salt to provide a fermentation broth containing a maximum of 9.5% by weight of magnesium lactate at the end of the fermentation, in the that magnesium lactate is in soluble form during and at the end of fermentation; and c. recovering lactate or lactic acid from the fermentation broth containing magnesium lactate, in which the fermentation medium contains fermentable carbohydrates in a concentration of not more than 9.5% by weight. |
