abstract System for producing a liquid coffee extract, which comprises: a single-use coffee capsule (2), with a tear-off extraction sheet member, (10), for the preparation of a liquid coffee extract, in an apparatus preparation of coffee, which comprises an extraction unit (20), comprising an extraction chamber (22, formed by providing a water injection cage (23) to inject water into the capsule, and a removal of the capsule, (21), which comprises a tear portion (24), to tear the surface area A2, with a plurality of tear members (26) to create coffee flow holes in the sheet member extraction (10), by the effect of the pressure of the fluid in the capsule; said capsule comprising: - a cup-shaped body, (2), which comprises a cavity (6) containing a predetermined quantity of coffee roasted and ground; said cavity being defined by a wall of the bottom, (4) and a substantially tubular wall, (5); ending, the side wall (5), by means of an opening of the cavity, (8), delimited by a peripheral internal edge (9), of the side wall (5), in the opposite direction to the bottom wall, (4 ); - an annular edge (17), which extends outwards, from said inner edge (9) of the side wall, and - a cover cap, (3), which is at least partially formed by a tear-off removal sheet member, (10); wherein the cavity (6) of the capsule contains at least 6.9 grams of roast and ground coffee, preferably 7.0 to 12.0 grams of roast and ground coffee, and characterized by the fact that the opening of the cavity, (8), is configured to have an opening surface area A1, measured at said inner peripheral edge, (9), in such a way that, the ratio factor of the area A1, relative to the surface area of the tear portion, A2, of the extraction plate of the apparatus, is at least 2.0, preferably between 2.1 and 2.5, of a more preferable form, between 2.2 and 2.4.
