Process for manufacturing a clear aqueous oil-in-water emulsion comprising an emulsified carotenoid, in which the carotenoid is present in droplets and dissolves in the oil, with an oil droplet size that is measured as average size z, with dynamic light scattering of 50-400 nm comprising the following steps: a) manufacturing a solution comprising modified starch at a concentration of 0.7-70%, optionally adding at least one water-soluble antioxidant to a concentration of 0.001-10%, at least one sugar at a concentration of 0.001-80%, and water and mixing the components, b) make a solution by mixing at least one carotenoid at a concentration of 0.1-15 %, optionally adding at least one antioxidant soluble in oil at a concentration of 0.001-10%, in triacylglycerol oil at a concentration of 1-30%, and melting the dispersed carotenoid at a temperature of 100-200 ° C , c) introduce the solution of step b) in the solution of step a), d) carry out at least one pre-emulsion step by passing the mixture of step c) through a rotor and stator mixer, e) carry out at least one stage, preferably two stages of high pressure homogenization, f) spray drying the emulsion from stage e) to obtain a powder, g-1) make an emulsion by introducing the powder from stage f ) in water; according to which the percentage is percentage by weight that refers to the emulsion from stage c) to e). |
